The Butchery Department

The butchery department is a focal point within the supermarket and the butchery team prides itself on offering only the choicest cuts of meat every day. Because the butchery department has to comply with strict food hygiene guidelines from a number of parties, the area needs to not only be kept clean, but comply with numerous health and safety standards. This includes an internal audit by Foodstuffs and swab tests carried out by Dunedin City Council. Every surface, every utensil or knife, and every person within the department must comply with all standards or they could be shut down.

The team pride themselves on looking the part, but far more than looking like traditional butchers, these essential uniforms are vital to the smooth running of the butchery department day in and out. Non-slip mats are likewise provided for the main butchery areas and in the vegetable area. Swapped out every 2-3 days, these mats help to ensure that water, dirt, and fat are not tracked out into other parts of the supermarket. They also stop trolleys tracking these substances throughout the store, which would otherwise become a hazard.
